His name evokes the cleanliness of the treatments and reminds us of a loved one for the winemaker Silvano Clementi and his family: his grandfather "Candido".
Candido is produced exclusively from souvignier gris grapes, a variety resistant to diseases and therefore to zero anti-parasitic treatments. Candido wants to be the expression of the maximum potential of this vine, suitable for sparkling wine and with a remarkable resistance to downy mildew and powdery mildew.
Its journey begins in Lavis, 2019 harvest, fermentation in steel and a passage in oak barrels for about 6 months.
This is followed by the tirage and aging on the lees for 30 months.
